Cooking up a storm

We started The Fresh 20 about two months ago and I have nothing but rave reviews about it.  We eat much, much healthier dinners that are more balanced and we have expanded our palates.  I swear the knowledge I have gained about how to chop and prepare fruits and vegetables is worth the switch alone--I mean who has ever cut up Jicama before?  Anyway, here is a quick look at some of the yummy dishes we have had so far...we are on the vegetarian plan but are not strictly vegetarians.  The meat is usually improved with leftovers for lunches.

Crave

I crave tex-mex.  I am not even going to pretend that it's Mexican food but I love all the fresh veggies and the cilantro.  #perfectsummermeal

Farro

We are using the Fresh 20 meal plan service and one of the reasons I love it is that it stretches my comfort zone with cooking.  Although most of the recipes are easy to follow they sometimes include ingredients that I have either never cooked before or have never heard of before.  Tonight's dinner starred Farro.  It's an Italian grain from the wheat family and it has a high nutrient density.  It cooks similar to rice but it's more chewy and slightly al dente.

Beets

 
Who would have thought that I would actually grow up to be an adult who loves beets?  I know the twelve-year-old me would be sorely disappointed.
 
There is nothing quite like the deep rich color of fresh beets.  I have my dear husband to thank for introducing me to this wonderful vegetable.

Welcome to my "other" blog.  Lately, I have been changing some habits--hopefully for the better.  One thing I have noticed is that with making lifestyle and changes to your routine comes the desire to make everyone else jump on your bandwagon and change their bad habits too.  I think it has less to do with actually judging people's behavior and more to do with sharing interests and finding common ground among family and friends. This is what I hope for this blog to be; a place where I can share some fun changes/adventures/fails and thoughts in my life.  I feel the need to have a distinct, open blog aside from my family blog where I can post glimpses into my everyday as I try to become better, to be better and to in the words of Samuel Beckett "fail better."
