Who would have thought that I would actually grow up to be an adult who loves beets? I know the twelve-year-old me would be sorely disappointed.
There is nothing quite like the deep rich color of fresh beets. I have my dear husband to thank for introducing me to this wonderful vegetable.
Beet and Apple Salad
two raw beets-peeled and shredded
two granny smith apples-peeled and shredded
1 tbls Bragg's apple cider vinegar
